Winter Wonderland by To Øl is a classic hoppy Wheat Ale with a clean, crisp unapologetically wheaty body. To Øl spent all year tinkering with the recipe to create a juicy, sessionable beer that captures all the fruity aroma of the hops.

Pouring hazy pale ochre beneath a small white head, Winter Wonderland breathes crisp zesty citrus and big grapefruit hops tones that give a spicy character to the bready, biscuity malts.

On the tongue, Winter Wonderland is supremely smooth, showing off many of the traits common to a great White IPA, and a softness characteristic of the wheat malt that is lifted to a superb grapefruit and spicy hops crescendo with a magnificent bitter finish.

We made a bed of astringent polyphenolic biomolecules, using unripe Persimmons and Zesty Orange Peel – then applied our signature Brett to the mix and double Dry-hopped the result.
