For this first-ever fully organic grape lambik, we macerated Grüner Veltliner grapes with one- and two-year-old lambik. The grapes were sourced from Christoph Hoch, a Demeter-certified winemaker from Hollenburg an der Donau, Austria. The total maceration
was almost five months, and the weighted average age of the blend was over 19 months at bottling. The final fruit intensity is 406 grams of whole Grüner Veltliner grapes per liter of finished Druif.
