All oak barrels in the Boon brewery have their own history and are characterized by unique microflora of wild yeasts. The bottles of Oude Geuze “VAT” are a combination of one specific wooden barrel (mono) and a minimal percentage of young Lambic (blend), which starts the refermentation in the bottle. The use of Lambic from one specific oak barrel (such barrels are also called “casks”) creates geuzes with very idiosyncratic characteristics: wine-like, whiskey-like, bone-dry or very tender. The number on the bottle always refers to the barrel number. We also offer the complete BOON OUDE GEUZE VAT VERTICAL!

Deze geuze is een blend van lambieken die gerijpt zijn op een eikenhouten vat met het nummer 108bis. Het resultaat is een complex en karaktervol bier met een diepe goudgele kleur en een fijne schuimkraag. Het aroma van deze geuze is rijk aan fruitige en houtachtige tonen, met hints van citrus, appel, peer, vanille, eik en leer. In de smaak proef je een mooie balans tussen zoet en zuur, met een frisse en droge afdronk. Je ontdekt ook subtiele smaken van kruiden, honing, karamel, noten en brettanomyces.

Corpo medio-robusto, carbonatazione media. Al palato, croccante e decisamente secca, rivela note aspre e pungenti ma non arroganti, con in evidenza i classici toni aciduli, citrici, vinosi e di "cantina" tipici dello stile.
Finale lungo ed asciutto. Rinfrescante, complessa e ben equilibrata con un tocco di acidità volatile è adatta all'invecchiamento che ne arricchisce le qualità aromatiche e gustative. Boon Vat 108bis è una miscela Geuze composta dal 90% di Lambic vecchio da foeder #108 (botte risalente al 1935 dalla capacità di 10000 litri ed utilizzata precedentemente per la produzione di birra con un alto livello di acidità volatile) e dal 10% di Lambic giovane. Questa Geuze, succeditrice del pluripremiato Vat 108, viene lasciata nella botte 108 per 2 anni e 7 mesi (dal 27 aprile 2016 al 28 novembre 2018), per poi essere imbottigliata e lasciata maturare nel magazzino del birrificio per più di un anno
“Il Lambic di questo foeder ha arricchito il carattere delle nostre miscele Geuze. Nel febbraio 2019 abbiamo deciso di smantellare il foeder 108 e sostituirlo con uno nuovo. La birra del 27 aprile 2016 è stata l'ultima produzione che è stata invecchiata in questo veterano ed è stata imbottigliata per diventare ‘Oude Geuze Boon VAT 108 bis, il 28 novembre 2018. Successivamente, il foeder è stato smontato e le migliori doghe vengono conservate nel nostro magazzino e serviranno come pezzi di ricambio per altre botti”.
