BZART LAMBIEK originates from the merger of two glorious traditions, i.e. the ‘Méthode Traditionnelle’ (traditional method) for sparkling wines and the spontaneous fermentation for Lambic beers. The result is a natural, sparkling Lambic beer of Belgian origin. Lambic is a spontaneous fermentation beer and the oldest of the still existing Belgian beers that probably originated around the year 1300. The “Lambiek Oud Beersel” that serves as a basis for the BZART Lambiek first undergoes fermentation during twelve months in wooden barrels in Oud Beersel’s cellars. This Lambic beer is then bottled by adding the “liqueur de tirage” (tirage liqueur) consisting of sparkling wine yeast and sugar for the second fermentation. The beer then ages in bottles for at least nine months before its final maturation according to the “Méthode Traditionnelle”. Through this process fine carbon dioxide develops, is maintained in the bottle and causes the Lambic beer to become effervescent. By applying “remuage” (riddling) and “dégorgement” (disgorging) the present yeast sediments are removed from the bottle. A characteristic feature of Bzart Lambiek is that there is no sweetening, so no “liqueur d’expédition” (shipment liquor) is added before corking and applying the muselet onto the bottle. This results in a sparkling BRUT Lambic beer with an overwhelming palette of tastes.

Lambic es una cerveza de fermentación espontánea y una de las cervezas existentes más antiguas que emergieron en el 1300. El lambic “Lambiek Oud Beersel” que se utilizó ha madurado durante trece lunas en barricas viejas en la bodega de Oud Beersel. Este lambic se embotella y entonces el “Método Clásico” se le es aplicado por otras trece lunas. Esto implica que después de agregar del azúcar y una levadura de vino espumoso, también llamado “licor de tiraje”, el lambic se fermenta de nuevo. El dióxido de carbono crece, se queda atrapado en la botella y hace una lambic chispeante. Después se emplean los métodos como el “remover” y el “degüelle” en última instancia, para crear un ambiente refinado y una bebida espumosa. Los períodos de maduración se expresan en “lunas” en lugar de meses, ya que se refiere al calendario celta que nuestros antepasados utilizaban, y que se basa en el ciclo lunar que comprende 28 días. 26 lunas del calendario lunar corresponden a 24 meses de nuestro actual calendario solar.
Al utilizar la palabra “luna”, el productor de bzart Lambiek se está refiriendo a su objetivo de “volver a la fuente.” Al hacer esto él quiere indicar que una cocina muy sabrosa se puede crear con platos sencillos, junto con bebidas naturales. Esta bebida también combina lo mejor de dos mundos, el carácter festivo de vino espumoso y el elaborado sabor artesano de la cerveza lambic. Tradicionalmente se dice que las mujeres prefieren una copa de champán como aperitivo mientras la mayoría de los hombres más bien una cerveza de calidad. Varios restaurantes han estado buscando durante años por una bebida que satisfaga a ambos mujeres y hombres. bzart Lambiek Brut Nature ya ha terminado esta búsqueda y es probablemente la primera y única cerveza lambic espumosa en el mundo. Este espumoso brut lambic nature tiene una graduación alcohólica del 8% vol. y se sirve de botellas de 75cl. Es ideal como aperitivo y digestivo y acompaña fabulosamente las comidas, entre otros crustáceos y peces como la caballa, la anguila, arenque, salmón.”

O resultado é uma cerveja Lambic natural, espumante, de origem belga. A Lambic é uma cerveja de fermentação espontânea e a mais antiga das cervejas belgas ainda existentes que provavelmente teve a sua origem por volta do ano 1300.
A ‘Lambiek Oud Beersel’ que serve de base para a BZART Lambiek é fermentada pela primeira vez durante doze meses em barris de madeira nas caves da Oud Beersel. Esta cerveja Lambic é depois engarrafada adicionando o ‘licor de tirage’ (licor de tirage) que consiste em levedura de vinho espumante e açúcar para a segunda fermentação.
A cerveja envelhece então em garrafas durante pelo menos nove meses antes da sua maturação final de acordo com o ‘Méthode Traditionnelle’. Através deste processo, o dióxido de carbono fino desenvolve-se, é mantido na garrafa e faz com que a cerveja Lambic se torne efervescente. Através da aplicação de “remuage” (enredamento) e “dégorgement” (regurgitação), os actuais sedimentos de levedura são removidos da garrafa. Uma característica do Bzart Lambiek é que não há adoçante, pelo que não se adiciona “licor de expédition” (licor de expedição) antes de se rolhar e aplicar o muselet na garrafa. Isto resulta numa cerveja BRUT Lambic Lambic brilhante com uma paleta de sabores esmagadora.
BZART Lambiek é altamente adequada como aperitivo, digestivo ou como acompanhante de crustáceos e peixes tais como cavala, enguia, arenque, salmão, alabote, bacalhau e cabrito de safira.
Bzart Lambiek é mencionado no menu de restaurantes de renome e ganhou o prestigioso prémio do “World’s Best Brut/ Champagne Beer” no World Beer Awards 2016 no Reino Unido.
