Craft Beer: Cloudwater v One Drop - DIPA V18 Fresh Craft Beer from our Bottle Shop and Taproom In v17 we’re excited to return to more familiar territory, alongside our longtime collaboration friends at The Veil, where we turn to our attention to
modulations across the brewing process. During every brew day temperature decisions determine: the degree of fermentability during wort production; extraction efficiency during lautering; the qualities and potency of bittering and whirlpool hopping, and a great many more impacts in addition to the hundreds of impacts cold-side during fermentation. In v17 we have used temperature changes to try to produce both a cleaner, more precise, and simultaneously more juicy and fruity beer. We’re thrilled with the results, and can’t wait for you all to sample one of the most impactful ever DIPAs we’ve produced. The latest in our DIPA v-series collaborations pushes the boundaries of modern liquid hop products. Until now, liquid hops have only ever played a supporting role in our most progressive beers, as the technology and real-life use feedback continues to evolve their impact. We aimed to go as big as possible with these full-flavour liquid hop extracts, creating a massive aroma and a deep hop resinousness. The hop bill starts with Citra Incognito from Barth Haas, Nelson and Motueka SubZero HopKief from Freestyle for biotransformation, Galaxy and Citra Spectrum, and finished up with Nelson and Motueka Amplifire green hops oil from Clayton Hops to achieve a layered complexity that rivals the best dry hop products available. The result is a huge NZ-led aroma of grape, lime and gooseberry, with citrus and peach flavours lingering on a thick resinous body leaving you smacking your lips with the intense all-out hop assault. We are grateful to have worked on v16 hand-in-hand with our friends at Range Brewing in Brisbane, Australia, who have worked in bold and adventurous ways to elevate the Australian brewing scene.
