While we will be sourcing barrels directly from bodegas to assure provenance and quality, we had a batch of Pedro Ximenez (PX) barrels that was on the peated side (albeit subdued). As a result, we decided not to use them for Zenne y Frontera, but to blend them with other (fruit) lambikken into geuze and fruit blends. This is the first of such blends to be released. Sour cherries were macerated partly on young peated lambik and partly on two-year old straight lambik in a stainless steel tank. We blended with young and three-year old (!) lambik. 55% of the blend is old lambik and the final fruit intensity is 567 grams of sour cherries per litre."

The kriek lambic is then blended again with more young lambic to obtain a minimum intensity of 35% fruit, and is bottled immediately afterwards. These bottles are then stored in our cellars for at least five months so that the kriek lambic can develop into a beautiful, traditional, and refined Oude Kriek. With a pleasant tartness and organic notes of almond and cinnamon as it warms in the glass, 3 Fonteinen Oude Kriek, will age perfectly but may lose some of the vibrant red colours and forest fruit aromas. This unfiltered and unpasteurised lambic is all-natural with no artificial juices, syrups, or sugars added. Traditional Lambic is living, cultural heritage rooted in the Zenne valley!

Wie bei den meisten Produkten hängt auch die Qualität von Bier von der Güte der einzelnen Rohstoffe ab. Kaum jemand nimmt diesen Fakt so ernst, wie die Brouwerij 3 Fonteinen aus Belgien. Die Brauerei arbeitet mit einer ganzen Reihe landwirtschaftlicher Betriebe aus der Region zusammen und hat zur Beschaffung exzellenter Braugetreide sogar das Pajot Cereal Collective ins Leben gerufen. Kein Wunder also, dass auch etwa die Hälfte des verwendeten Hopfens aus den Hopfengärten Belgiens stammt und die Sauerkirschen für das Oude Kriek auf belgischem Boden wuchsen. Für das Kirschbier wurden so viele der tiefroten Früchtchen verwendet, dass am Ende etwa 350 Gramm Kirschen auf einen Liter Gerstensaft kommen.

Die Kirschen schmeckt man nicht nur, man sieht und riecht sie auch: Das rubinrote Bier mit zartrosa Schaum duftet intensiv nach vollreifen, saftigen Kirschen, die sich in der Nase mit Anklängen von Zitrone und Eichenholz vereinen. Der Antrunk ist trocken wie ein edler Rotwein und weist die gleichen würzigen Noten von erdigem Holz, dunklen Trauben und Leder auf. Das Aromenspiel wird von vollmundigen Sauerkirschen, floralem Hopfen, funky Hefe und hellem Malz vervollständigt. Eine fruchtige Säure untermalt das bierige Vergnügen und formt ein saures Finish, das Kirsch- und Zitrusnoten auf die Zunge zaubert und Lust auf eine weitere Flasche weckt.

HISTORIA 3 FONTEINEN
Fue fundada en el año 1887 como un local que funcionaba como café y a la vez productor de lambics. Donde elaboraban gueuze mediante la mezcla de lambics jóvenes y añejadas que eran adquiridas de otras cerveceras. La compañía fue adquirida en 1953 por Gastón De Belder, amplió el negocio con un restaurante, al comienzo de la década de los 80 falleció y la empresa la heredaron sus hijos Armand y Guido. Armand se quedó al mando de la fábrica. Continuo con la tradición de la mezcla de lambics, actualmente ya no sólo mezcla, también elabora sus propias cervezas. Boon, Girardin, Lindemas y Cantillon son las cerveceras que les proporcionan los lambics para poder hacer la mezcla y obtener sus geuze.

Cerveza estilo Lambic, de fermentación espontánea. Corresponde a la mezcla de la temporada 2018/2019. Elaborada con la la maceración de cerezas agrias recogidas a mano en una lambic joven durante 4 meses, a razón aproximada de 1 kg de fruta por litro de lambic. Después se mezcla nuevamente con más lambic joven para obtener una intensidad mínima de 35% de fruta, y a continuación es embotellada. Las botellas quedan en las bodegas durante al menos cinco meses.

Maridaje: ideal como aperitivo, y con ensaladas o quesos suaves.

Curiosidad: Botella serigrafiada.

Consejo: Verter lentamente en una copa de cristal tipo “flauta”, sin perturbar el sedimento de levadura que quedará en la botella. Cerveza no filtrada. Bien conservada (protegida de la luz y en lugar fresco y seco) puede evolucionar durante décadas.

Dit proces duurt tussen 6 tot 8 maanden en na de botteling rijpt het bier nog minstens 4 maanden in een warme kamer waar de spontane hergisting in de fles gebeurt.De schuimkraag van Oude Kriek is zeer gevoelig aan de concentratie van olie die de kriekenpitten bevatten en kan van jaar tot jaar lichtje verschillen.Aan oude Kriek 3 Fonteinen worden geen smaak-, zoet-, of kleurstoffen toegevoegd wat maakt dat dit bier zeer natuurlijk en vooral dorstlessend is.Extra voordelige prijzen bij afhaling.

Fonteinen Oude Kriek is the result of macerating hand-picked whole sour cherries on young lambic for at least four months, in a proportion of one kilogram of fruit per litre of lambic. The kriek lambic is then blended again with more young lambic to obtain a minimum intensity of 35% fruit, and is bottled immediately afterwards. These bottles are then stored in our cellars for at least five months so that the kriek lambic can develop into a beautiful, traditional, and refined Oude Kriek. With a pleasant tartness and organic notes of almond and cinnamon as it warms in the glass, 3 Fonteinen Oude Kriek, will age perfectly but may lose some of the vibrant red colours and forest fruit aromas. This unfiltered and unpasteurised lambic is all-natural with no artificial juices, syrups, or sugars added. Traditional Lambic is living, cultural heritage rooted in the Zenne valley!
