60 | 40 blend of: Stainless brett. saison (5 months old) – 60% Brett. saison fermented in a puncheon (9 months old) – 40%
The goal with the blend was similar to a bière de coupage. We wanted freshness and vibrancy from the stainless saison and a light brett. derived funk from the puncheon.
We transferred the blend to stainless & dry hopped w/ Challenger (UK) & Saaz (CZ) at the rate of 2.6g/L for 72 hours prior to packaging.
Packaged on September 19th 2024 and naturally conditioned in can for 6 weeks.
Aromas of cantaloupe, orange peel & fresh oregano. The funk is leant towards the tropical range of the spectrum.
On the palate there is lot’s of peach & white flowers up front. This gives way to stewed fruits towards the back. Quite textural with a bitterness that is assertive but moreish.
