Il nome che il birrificio ha scelto per l'intero progetto che riguarda lo stile Italian Grape Ale è Û, ovvero "uva" in dialetto bolognese. Il progetto nasce dalla voglia di lavorare con vinaioli naturali che abbracciassero la filosofia dei lieviti indigeni (visceralmente legati ad una specifica uva e ad uno specifico luogo) e coltivassero vigneti storicamente radicati al territorio.

Il colore è dorato carico, la schiuma bianca a grana grossa poco persistente. Al naso è brettata, fruttata e floreale. Al palato emerge la componente acida, con note tendenti al vino, e con una connotazione barricata, legnosa. Il corpo è medio, la carbonazione bassa. Il finale è secco e persistente.
Come spiegato in etichetta con la figura e la citazione della favola di Esopo ripresa da Fedro, meglio non coglierla acerba ma lasciarla maturare in cantina.

The result is an amber colored beer, with floral aromas, ripe yellow fruit and elegant oxidation notes. The sinuous body is thickened by the tannins and rounded by the wood, while the drink is facilitated by an accentuated dryness.
Evolving product suitable for aging.
The name chosen for the entire Italian Grape Ale style project is Û, meaning "grape" in the Bolognese dialect. The project consists of two limited edition beers: this one with red grapes were used and its sister Û baccabianca with white wine grapes.
The idea was immediately clear: to work with natural winemakers whose genuineness of the wines Ca' del Brado appreciated, who embraced the philosophy of indigenous yeasts (viscerally linked to a specific grape and a specific place) and cultivated vineyards historically rooted in the territory.

Il nome che abbiamo scelto per l’intero progetto che riguarda lo stile Italian Grape Ale è Û, ovvero uva in dialetto bolognese, e si divide in due birre ad edizione limitata: questa dove è stata utilizzata uva a bacca bianca e sua sorella Û baccarossa.
L’idea è stata fin da subito chiara: lavorare con vignaioli naturali di cui apprezzassimo la genuinità dei vini, che abbracciassero la filosofia dei lieviti indigeni (visceralmente legati ad una specifica uva e ad uno specifico luogo) e coltivassero vigneti storicamente radicati al territorio.Û baccabianca è una IGA con 10% di uva Grechetto Gentile destinata al Pignoletto del vignaiolo biodinamico Gradizzolo. Il mosto è stato sottoposto ad un ambiente fermentativo spontaneo proveniente dagli acini, oltre ad un inoculo di brettanomyces, per poi affinare per 6/7 mesi in botte con le bucce in macerazione.
Ne risulta una birra di colore ambrato, con aromi floreali, da frutta gialla matura ed eleganti note di ossidazione. Il corpo sinuoso è inspessito dai tannini e arrotondato dal legno, mentre la beva viene facilitata da un’accentuata secchezza.Prodotto in evoluzione destinabile all’invecchiamento.
