Naturalmente ogni batch è differente poiché i Lambic autoprodotti impiegati, cambiano di volta in volta, provengono da botti di diversa tipologia e grandezza e le proporzioni del blend non sono mai le stesse. Elegante, complessa e pungente in pieno stile 3 Fonteinen, solitamente si presenta di colore dorato. Si percepiscono al naso ed al palato note acidule, di legno, cuoio, cantina e stallatico arricchite da sfumature citriche. Una birra dalla spiccata acidità, secca e rinfrescante: un must per gli amanti dello stile.

Die Qualität der Rohstoffe, die die Brouwerij 3 Fonteinen für die Herstellung ihrer Biere verwendet, war schon immer exzellent, doch in den letzten Jahren hat sich die Brauerei selbst übertroffen und auch noch eine Reihe an Braustücken entwickelt, die mit Zutaten aus kontrolliert biologischem Anbau produziert werden. Der Großteil des Hopfens, viel Getreide und auch die meisten der verwendeten Früchte stammen aus der Region, werden mit größter Sorgfalt von Hand verlesen und mit Liebe zum Detail weiterverarbeitet.

Das Cuvée Armand & Gaston ist eines der Bio-Biere im Sortiment. 60 % des verwendeten Getreides wuchs im Pajottenland, der Heimat der Brauerei. Der Sud ist eine Heirat aus sieben verschiedenen Braustücken, die in sechs unterschiedlichen Fässerngereift wurden. Mehrere Bestandteile wurden zwei oder drei Jahre lang gelagert, bevor sie für das Cuvée ausgewählt wurden. Das fertige Bier präsentiert sich in einem kupfern schimmernden Honiggold und krönt sich mit einer flüchtigen Krone luftigen Schaums. Eine olfaktorische Sinfonie aus funky Hefe, grünen Äpfeln, Zitruszesten, weißen Trauben und blassem Malz kitzelt die Nase und macht Lust auf den Antrunk. Das Geschmacksbild wird von einer fruchtigen Säure dominiert und bringt ein harmonisches Zusammenspiel aus sanftem Getreide, grünem Apfel, Weinbergpfirsich, Zitronenschale, hellen Trauben, würzigem Eichenholz und blumigem Hopfen auf die Zunge.

No two bottlings are alike, as there are multiple variables in the blending process, a variety of barrel sizes and shapes, differences in aged lambic proportions, etc. This cuvée, like all of our lambic, is 100% natural, authentic, spontaneously fermented, and crafted with steadfast adherence to tradition, like Armand and Gaston Debelder have always done it. This geuze has fermented in the bottle and will continue to develop its tastes and aromas over its long life when properly cellared. La fermentación espontánea, la maduración paciente en barricas de roble y la continua evolución del ecosistema en la botella dan como resultado una cerveza natural distintivamente compleja y elegante. La Oude Gueuze Cuvée Armand & Gaston es una mezcla de lambics jóvenes y viejas, lo que deriva en una cerveza de enorme singularidad, bastante compleja.
Presenta un color amarillo anaranjado, muy pálido y brumoso, coronado por una fina espuma blanca. En los aromas destacan los cítricos, especialmente pomelo y limón, pero también aparecen suaves reminiscencias a madera o levadura.
En boca, como toda buena lámbica no afrutada, es seca, pero con unos agradables toques de limón, hierbas y malta.

Belgien

3 Fonteinen ist eine kleine Brauerei in Beesel im Umland von Brüssel. Sie wurde 1887 zunächst als Café gegründet und fungierte später als Restaurant. Erst im Jahr 1998 legte sich 3 Fonteinen eine eigene Brauanlage zu, um vor Ort Bier herzustellen. Seitdem stellt die belgische Brauerei vor allem Lambicbiere her und hat sich damit weltweit einen Namen gemacht. Für die Herstellung von Geuze Bieren bezieht sie außerdem Lambics von Boon, Girardin und Lindemans. Wer die Brauerei vor Ort besuchen möchte, kann dort nach vorheriger Anmeldung auch Führungen machen.

Ogni lotto di Cuvée Armand & Gaston è unico poiché i Lambic utilizzati sono autoprodotti e variano di volta in volta, provenendo da botti di diverse tipologie e dimensioni, con proporzioni di blend che cambiano costantemente.

Elegante, complessa e distintamente caratterizzata dallo stile 3 Fonteinen, questa birra di solito si presenta con un colore dorato. Al naso e al palato emergono note acidule, di legno, cuoio, cantina e una sottile essenza di stallatico, tutte arricchite da sfumature citriche. Con una marcata acidità, è secca e rinfrescante: un’indiscutibile scelta per gli amanti dello stile.
