Wilding Cider Ditcheat Hill 2022

Description Ditcheat Hill is a special orchard, close to where Beccy & Sam, the makers of Wilding, live in Somerset. As before this is a blend of Yarlington Mill (40%), Browns (40%), Ashton Brown Jersey (15%) and Sweet Coppin (5%).

2022 was very dry and extremely hot, and the fruit was typically very high in sugar, tannin, and aromas, giving some very concentrated ciders. This is the most concentrated Ditcheat Hill made yet and is definitely a good candidate for cellaring. All of the usual aromas are in play here just with the volume turned up!

Well balanced and elegant, lean acidity, fruity aromas and a tannic grip. Aromas of ripe apple, orchard floor, wild strawberries, toffee apple, oolong tea tannins. Drink with apple pie, cream tea or creamy curries. Lightly Naturally Sparkling Sweet Cider. 750ml. 5.1%.

Wilding Cider are orchard cider makers and are based in Chew Magna, North Somerset. They mostly grow Somerset cider apple varieties, in traditional orchards, managing them in a careful organic way. Fruit is picked from the ground, letting the fruit mature and fully ripen before pressing, and then fermented gently and slowly with wild yeasts, no sulphites and plenty of time.
