In 2021, with slightly smaller crops in their own orchards, Wilding set to exploring some interesting traditional orchards for additional fruit. Cooth orchard is certainly a curiosity – an old farm orchard which outlives the farmhouse and buildings which were lost in a fire last century.
Very full tannins which are compact and astringent, quite crunchy, very good quality. It really opens up with a bit of air. Classic bittersweet aromas of ripe fruit, orchard floor, spice, leather. A food friendly cider that would be great with hearty food like casseroles, game, hard cheeses and cheese dishes. Still, Bone Dry Cider. 750ml. 7.4%.

Wilding Cider are orchard cider makers and are based in Chew Magna, North Somerset. They mostly grow Somerset cider apple varieties, in traditional orchards, managing them in a careful organic way. Fruit is picked from the ground, letting the fruit mature and fully ripen before pressing, and then fermented gently and slowly with wild yeasts, no sulphites and plenty of time. Cooth orchard is certainly a curiosity – an old farm orchard which outlives the farmhouse and buildings which were lost in a fire last century. The blend is built around Stable Jersey and is high in tannin , very moorish and delicious. Worth experimenting with decanting. Drink with fatty foods like roast pork, braised mutton and extra mature Mongomery’s Cheddar
