Isle Of Mixed Ferm is a 9.8% mixed ferment raspberry, tayberry and honey imperial sour, aged for 6 months in Islay whisky barrels. Fermentated on Hornindal Kveik (a blend of farmhouse yeast strains which produce a tropical flavour profile, with a complex aroma that presents as subtle stone fruit, pineapple, and dried fruit leather) and a unique species of Lachancea yeast selected for its ability to produce lactic acid. Aged on 140grams per litre of raspberries, 85g/L of tayberries, and 70g/L of caramelised polyflora honey, all sourced in Scotland.
