Juicy, fruity, soft and smooth; punchy New World hops are what this beer is all about. Five Amarillo additions in the boil and twice dry hopped with Simcoe and Citra, delivering intensely layered citrus and tropical fruit flavours. Moderate bitterness provides a balancing ‘snap’ while soft Scottish water and a healthy dose of oats keep everything well rounded.

Light amber/straw in colour with a very light haze and bright white head, the aroma is of candied orange peel with melon, peach and delicate floral and pine notes. On the palate pink grapefruit and lychee are up front with a sweet malt foundation and crisp, sharp bitterness to keep things fresh and fruity. It’s a dry finish with soft carbonation and the lasting impression is of fresh, alluring, hoppy goodness.

Simple Things say “This feels like a special one for us because it’s the first time we’ve used Citra and Simcoe, having previously preferred to use other, less ubiquitous, varieties.

“We did a couple of IPAs before Christmas with English and more old-school US hops, and that led us to the idea of doing a straight-up IPA of the kind we like to drink ourselves. And once you start on that path, there’s really no way of avoiding Citra and Simcoe; they’re not ubiquitous for no reason! We did various trials in the process of developing the recipe and loved the results of layering multiple Amarillo additions in the boil, but nothing comes close to these two for dry hopping. We got over ourselves and here we are with a delicious beer.

“So what makes ours different to (almost) every other modern IPA? Balance. Roundedness. Drinkability, by the bucketload. More kettle hops, fewer dry hops. Perfectly soft water from Loch Katrine. CAN CONDITIONING. Aiming for total satisfaction, without going to extremes. And achieving that… though we say so ourselves :o) )”
