Seven Island Brewery THEOGONY PROJECT - GOD OF DEAD (HOLY GOAT COLLAB)

For our second  beer under the "Theogony Project" which we named, GOD OF DEAD, we teamed up with our friends from Holy Goat Brewery  in Dundee who are known for their amazing skills mastering the sour ale game and  we decided to create together an imperial huge  stout !

We used a big , high-dextrin malt base which we boiled for 5 hours,  in order to achieve an oily and extra viscous body almost like crude oil. After the fermentation was done, we dosed the beer with a lot  of vanilla beans and mountains of toasted pecans to create a Dulce de léche inspired stout with layers of different flavors. The result,  clocking at 11% is a combination of Dulce de leché desert mixed with vanilla and toasted pecans which is like dipping your spoon in a pecan pie filled with caramelized Dulce de leché. A concoction of burnt sugars, marshmallows, chocolate ,nuts and dried red fruits packed in a can .
