Koelsch is typically lighter even than Pilsner in color and is often around 5% ABV with a slightly malty, fairly soft palate. The finish is decidedly dry due to its high attenuation and firm hop character. The cleanness is a result of a fairly long, cold maturation of two to six weeks.

During the Wilhelminian period, at the end of the 19th century, breweries sprang up like mushrooms in Cologne. The founding of the PRIVAT-BRAUEREI HEINRICH REISSDORF – at that time called TOP-FERMENTED BRAUEREI HEINRICH REISSDORF – in 1894 in Cologne’s Severinsviertel also falls within this period. In the war year 1917, when the men were in the field, Katharina Reißdorf, wife of Friedrich Reißdorf, managed the brewery. These two had three sons: Heinrich Reißdorf – he died in an accident in the brewery in 1936 – and the partners Hermann-Josef and Karl-Heinz Reißdorf, who died in 1996 and 1997. They led the company into the difficult economic times – the brewery was 90% destroyed – after the Second World War.
