We love to link our beers here at Polly’s, and 58bpm is a continuation of this trend. A distant cousin of our insanely popular Circadian Rhythm; which in itself was named for the brewer’s disturbed sleep patterns from their
to 8pm work days. 58bpm is a reference to the metronome used by Matt to get a decent night’s sleep after a long day at the brew kit. An almost identical hop bill to Circadian Rhythm of Citra, Simcoe, Mosaic and this time Azacca, albeit this time charged up to 40kg in the dry hop; this is a DIPA of insane flavour intensity – expect stone fruits, mango, pineapple and just a hint of grapefruit throughout. Less
