De fles is geopend zeker een maand houdbaar. Heeft altijd minstens 1 jaar gerijpt op vat, elk jaar een oplage van een paar duizend stuks, in 2020 betreft het de batch van 2018, maar tzt kan ook die van 2019 al klaar zijn. Oplage: 1200-6000 stuks, afhankelijk van het jaar.

A truly specialist cider, Tawny is a rich, opulent and viscous cider, dark in colour and possessing complex bittersweet flavours. Tawny can be consumed as a slightly chilled aperitif or it also performs excellently as an accompaniment to cheese or desserts.

We create this cider by chaptalising the Michelin and Dabinett apple juice whilst it ferments. Raising the alcohol to 15%, we arrest the fermentation. This leaves residual sugars which encourage the development of highly complex favours during its minimum 12 month aging process. When we consider the cider has reached maturity we pass it through dry hops. This final step before bottling adds additional flavour and counter balances the residual sugars remaining within the cider: which all goes to create an array of delightful aromas on the nose. A still cider to be enjoyed at leisure and in moderation. The Tawny is produced in very small quantities. Meer smaaknotities (in het Engels):

Pours a very clear pale gold, no head, no carbonation.
Smell is of apple tannin, some tropical fruit, faint hint of hop.
Taste is of desert apple, apple tannin, some tropical fruit, fortified sherry tones,
Experience. Full palate, wonderful slight dry mouth feel, desert apple on the lips, tannin on the tongue, medium to light in body, balance is sweet. Good length in taste, cream/fino tones in the after taste, sweet finish.
WOW! Holy crap Batman! The sherry/desert wine tones that are in this cider are just mind boggling wonderful! Think apple Schnapps! Thank Christ (Blacks Brewery)and Stonewell had the idea to dry hop a cider back in 2014. This is O. M. Fen. G! Have this cider at a dinner party as an aperitif or as a desert wine and you will be on a winner for sure.
