Medium dry, still, rural method cider. Dabinett (55%) Browns (30%) and Chisel Jersey (15%). This is well structured with soft tannins and a full body, well balanced with just a little bit of residual sugar and ideal to drink with rich savory food – hard cheeses, casserole, roast pork, mushrooms on toast, but also at home with oysters and chips. Rather than the more usual orange aromas of Dabinett, this is showing aromas of white peach, grape, stewed strawberries and spice.
Wilding Cider are orchard cider makers and are based in Chew Magna, North Somerset. They mostly grow Somerset cider apple varieties, in traditional orchards, managing them in a careful organic way. Fruit is picked from the ground, letting the fruit mature and fully ripen before pressing, and then fermented gently and slowly with wild yeasts, no sulphites and plenty of time.

Dabinett 55%, Browns 30%, Chisel Jersey 15%. A very West Country style of cider, blend of Dabinett (used for its soft tannins & easy going nature) reinforced with a little Chisel Jersey for more backbone, & then paired with the lovely light, fruity acid of Browns. This blend was made with the rural method to capture just a little residual sugar to balance the acid and tannin, and the aromatic character is very appealing, rather than the more usual orange aromas of Dabinett, this cider shows notes of white peach, grape, stewed strawberries, and spice. Great with food. (Fish pie or Kirkham’s Lancashire). Drink cool, not cold. Still Medium Dry Cider. 750ml. 6.6%.
