It’s a nectar specialist yeast which was isolated from wild flowers where it usually ferments nectar and performs complex biotransformation reactions to make the flower’s aromatic compounds more attractive to bees… Mental eh?! Well, it turns out that we like the same things as bees, and hops are flowers, so this yeast in an incredibly juicy IPA just had to be done – it’s a match made in heaven!”
