Juicy IPA, co-fermented with Metschnikowia Reukaufii (isolated from wild flowers) and Verdant IPA (beloved by New England IPA brewers) yeasts, and hopped with Harlequin, Citra & Mosaic.
and darker beers, and don’t often brew IPAs, but over the last few years I have been playing around with a *really* unique, and super special yeast called Metschnikowia Reukaufii, and I just can’t resist! It’s a nectar specialist yeast which was isolated from wild flowers where it usually ferments nectar and performs complex biotransformation reactions to make the flower’s aromatic compounds more attractive to bees… Mental eh?! Well, it turns out that we like the same things as bees, and hops are flowers, so this yeast in an incredibly juicy IPA just had to be done – it’s a match made in heaven!”
