Our next release is the third iteration of our house saison. Saison de Maison Blend 3 is a blend of barrels filled in December 2021 and March 2022, packed full of British Bramling Cross from Brook House Hops in Herefordshire. This beer continues to evolve and for this blend we’ve increased the hopping rate significantly to just under 10g/L. Acidity remains at a similar level to Blend 2 but the Bramling Cross brings some really lovely character. There’s mouthcoating lemon peel, pleasant resinous bitterness and complex fruitiness. A real easy drinker as is but we’re sure that with some time, the funk and complexity will only increase and take this beer in great directions.

Saison de Maison is fermented in barrel with a mixed culture of saison yeast, brett and lactobacillus before being blended and dry hopped, for this first iteration, with British grown Goldings. It’s got funk, fruity brett character, hints of gingerbread and pear from the dry hop and a refined acidity.
Bright carbonation and pleasing acidity lead into layered, fruit forward brett and hop character. We get funky pineapple up front with notes of gingerbread, ripe peach and subtle Perry pear. Gentle bitterness and herbal, woodruff notes meander into the long, clean yet complex finish.
Balance say “Drink this beer now to get the brightest hop character or lay it down for a few years to see where the funk takes it!”
DID YOU KNOW that Balance are James Horrocks and Will Harris. They have been working in the Manchester brewing scene for several years with current day jobs at Squawk Brewing Co. and Track Brewing Co. respectively. By night they are building Balance Brewing & Blending, a mixed-culture, barrel fermentation project.
