Riestra Sparkling Medium-Dry Cider PRODUCER: Our first cider press was made in 1906, and its making has been passed on to us as an endearing anecdote. At the beginning of the last century Mr Robustiano Riestra cut down a large tree, probably an eucalyptus,
was transported by two Asturian traditional carts to his house in Santa Olaya de Baldornón (Gijón), where he built a beam press. 2012 marks another step in the trajectory of this brand. The release of our first sparkling cider, Sidra Guzmán Riestra. This is a sparkling cider produced through the methode champenoise, with a second fermentation and aging in the bottle that has been received by critics and the public with great appreciation. For its elaboration, the traditional method is used with second fermentation in bottle. After a thoughtful and cared selection of the ideal cider in our mill, there is the fermenting in bottle with the addition of cider yeasts. The bottles are settled in rime position for at least 8 months, so this fermentation produces a minimum pressure of 6 atmospheres before disgorging. Once passed the necessary time, we proceed to remove of the layers to move the sediments towards the neck of the bottle and do the traditional disgorging. TASTING NOTES: Very balanced among acids, bitters and sweets. Reminds of a table apple. Excellent behaviour in glass, with a rosary of very maintained bubbles. Perfect as appetitive, with fish, pasta and rice. Also very suitable for pairing with desserts Ver menos
