'Talus has always been a mysterious siren here at Polly’s HQ – a hop that we feel should have more people championing it but strangely seems to run under the radar. As a direct descendent of Sabro, it has all the incredible stonefruit, lime, and coconut characteristics that its parentage boasts, but with additional layers of fleshy white fruits – think lychee and longan fruits – to add an incredibly unique creaminess that lends itself perfectly to the New England IPA style. Conscious of not wanting to steer this one into cloyingly sweet territory, we’ve paired this hop up with Polly’s stalwart Mosaic to bring its usual swagbag of bright and punchy tangerine, berry, and mango, with a slight edge of herbal complexity to retain this incredible beer’s balance to the nines.'
