and Fuggles in barrels chosen for their expressively funky fermentation character. Finally, blended with fresh beer and refermented in the bottle, a special beer emerges. It pours a yellowed gold with a large, rocky head of foam. The aroma is musky, spicy, flecked with petals of peony and ripe pears. The palate is full but light and with a rich, chewily complex bitterness.
