to work with the legendary Polly's Brew Co. In the intervening five years, both breweries have moved up in scale; Polly's moving from their converted stable and ourselves moving to the juggernaut Springwell site. We went to North Wales to display all that growth and knowledge over the course of half a decade. Wanting to work as closely to our original collaboration as possible, this beer goes ultra high on the oats and wheat to create a soft, pillowy, fluffy DIPA packed to the nines with hot side Cascade, and cold side Citra, Talus, and HBC 1019 all positively dripping with fresh chopped grapefruit, valencia oranges, peach, coconut cream, and caramelised banana.
