We built WCK with our favourite approach to a super sinkable light lager, an already lean beer with a handful of rice. We then fermented warmer, lagered shorter and left the beer ever so slightly cloudier than usual. We typically aim for a very restrained yeast expression in our lagers, but this time we’ve really accentuated the character of our house strain.
Many bags of Mosaic hops later and we’ve got one of the most archetypally Newbarns beers we’ve ever made. Thumbs up all round.
