The Dickens is the brewery’s take on a Belgian Golden Strong, a style that remains one of Jonny’s favorites. Effervescent, heady, pale, dry, and lightly bitter, it strikes a delicate balance—managing to be both refined and dangerously drinkable
This batch was brewed in June 2024, beginning with a clear wort drawn from an infusion mash of pilsner malt and spelt. During the boil, generous amounts of European hops and cane sugar were added. Fermentation took place in the brewery’s open coolship, where warm summer temperatures encouraged a vibrant fermentation. The young beer was then matured in large oak casks with wild yeast and bacteria, developing depth and complexity over the winter months.
To complete the process, the beer was dry-hopped with whole-leaf hops and bottle conditioned for three months before release, ensuring a bright, expressive character in every pour. Ver menos
