with the pair getting involved with every step of the journey. And Caroline created the label design too.
Many of you will know Adam from his many eloquent pieces, primarily with Cider Review. Both accomplished thespians as well as everything else, the final act in this play was seeing this cider on the dinner table at the feast which followed their wedding. Wassail Adam and Caroline – here’s to a happy future.
And in the meantime, who better to tell us about their cider than the pair themselves.
They write:
“Point One: In October 2020 we joined Little Pomona to pick perfectly ripe Dabinett apples from Brook House Farm.
“Point Two: We pressed them and racked the juice into oak casks.
“Point Three: In December 2021 we tasted through nineteen casks and chose our favourite, a beautiful ex‐brandy barrel, to bottle.
“The result is a perfect marriage of variety, oak and time. Pure Dabinett – all fresh, fleshy peach and orange in flavour with ripe, supple tannins, intertwined seamlessly with the barrel’s luscious tropical tone and sweet spices.
“This is a special cider. Drink it with indulgent food, or slowly on its own. However you drink it, we hope you love it as much as we do.
