Brewed in collaboration with Newbarns, Holy Goat made this take on a traditional Scottish ale using a double/ reiterated mash. This 17th century brewing technique utilises the runoff wort from one mash, as the liquor for a second.
concentrates the wort, allowing the production of a very strong beer without the use of additional sugars (though HG did also add sugars here). They used a historically inspired recipe utilising Chevallier malt along with heritage crystal and No. 2 invert sugar, ingredients typically used in beers of this calibre in the late 1800s.
