lambic breweries such as the Timmermans brewery because of its bright red juice and tart-sweet taste. We give these Schaerbeek cherries six months to macerate in one of our young lambics. We then mix this cherry lambic with a lambic that has aged for 19 weeks in bourbon barrels. The final touch?
