The Chicago Brewery Goose Island is a world-master at barrel ageing beer, they were one of the first of the modern breweries to do so. Take Madame Rose. This is a Belgian ale brewed in the Flanders Oud Bruin style. It has been aged in barrels and then bathes in a ton of cherries. The cherries are apparent on the nose but take a sip, and the surprisingly lively liquid has a vinegary bite and a depth of flavour that bounces around the mouth like popping candy. An exceptional beer indeed.
