honey adds to the sweetness and the spices, fruit and nuts then temper it: plenty of ginger and small additions of cinnamon, cloves, nutmeg and green cardamom were added to the boil, along with fresh lemon zest and Bramling Cross hops. Roasted almonds, orange zest and more ginger added post ferment.
