A collaboration with After the Harvest Brewing and Alex & Gabe Cook. A wort of 80% pils and 20% wheat grist with aged Bramling X and Goldings Hops fermented by Belle Saison yeast. Co-fermented at the end of October 2020 witha spontaneously
perry of Blakeney Red 30%, Gin 30%, Red Longdon 30% and Butt 10% pears. Bottled in March 2021 with the addition of 10 grams/litre sugar, then conditioned and matured in bottle. This fully fermented saison was made last winter, to be drunk in the summer to slake the thirst of harvest workers.
Olivers make a selection of fine Herefordshire ciders and perries with an emphasis on balance and character coupled with drinkability. Based around the spontaneous ferment of selected varieties of cider apple and perry pear from fruit grown in Herefordshire and the surrounding 3 Counties orchards. Nominally referred to as minimal intervention, we strive to take what the fruit gives, respecting the great heritage and traditions of the past but with an eye to innovating for the future. What that really means is we mill and press great fruit, expose the juice to marauding and hungry wild yeasts and then for our part blend and bottle the resulting ferments. All the while respecting the health, safety and well being of our customers, consumers, employees, the earths natural resources and the environment. Ver menos
