The base beer we’ve used is a Belgian Saison fermented at our Old Flax Store and then racked into six white wine barrels. Wild cultures which were brought to Dark & Wild 2019 by Homes Brewery, Speciation Ales, and Transient Artisan Ales were then blended and added to the barrels.
This brew has assertive citrus acidity and honey-like funk notes, complemented with white wine flavours from the barrels and soft stone fruits, with a drying and tannic finish.
6.7% ABV // 9 EBC // 5 IBU // 1.052 OG
INGREDIENTS: Malted BARLEY (GLUTEN), OATS (GLUTEN), WHEAT (GLUTEN), Hops, Yeast

Here is Northern Wild 003, a 6.7% mixed Fermentation Saison aged in white wine barrels.
