Rounding out the blend is 21% from an acid barrel - filled in September 2018, featuring a very strong lactic acidity (super lemony and tart).
Finally, the youngest portion of the blend was from a barrel filled in May 2019, balanced in terms of acidity and flavour but lacking some of the complexity the older barrels bring to the blend. Ver menos
