Its a barrel-aged blend of two ciders - one made wih strawberries and lavender, and a second macerated on a mix of whole, red and blue plums for 4 months.
are reminiscent of something floral you cant quite put your finger on. Revel decided to lean into it and added a small amount of lavender.
Let’s nerd out. We’ve all had strawberries before, but have you ever stopped to ask what they really smell like?
Underneath those big, red juicy aromas is a whisper of florality. It makes sense; strawberries are part of the Rosaceae family—which includes both apples and roses.
But glomming lavender and strawberries together on their own is a little amateur-ish. Nearly a decade of cidermaking has taught Revel that flowers need more love than that.
Enter dark plums. Tannins in plum skins and stones present differently than any other fruit. Assertive and drying, but short—just present long enough for a quick kiss on the cheek. They ground flowers texturally, giving them a springboard of acid to jump off of (right into your nose).
