Our first double-decoction lager! Decoction is a mash regime that involves taking about 1/3 of the mash into the kettle, boiling it, and returning it to the mash. Overall, it does a better job of creating a beautifully clear, super crisp and dry beer,
a single infusion mash that we are used to. And attempting it in our little brewery was, some would say - dumb. All this silliness and 6 months of lagering led to layers of soft malt complexity, with herbal hop notes and a dry, snappy finish. It’s a strong malt driven lager, like the good old days. Munich and Vienna drive that honeyed weetbix, almond and fresh cereal depth, with noble hops giving fresh-cut herbs and green grapes. The finish is snappy, giving a refreshing quality that makes you want to jump on tables and sing Prost! Less
