Tasmanian grown & malted barley together with specialty grains - quinoa, buckwheat, rye & oats – which have all been grown organically in the Forth River Valley by the Damen family at Kindred Organics. The novel twist to this idea is Quinoa. A seed rather than a grain, quinoa in its natural state at harvest is coated in a protective phytochemical as a natural barrier to predation. If unwashed prior to human consumption, the presence of these saponins render quinoa very bitter, and we have profited from this natural resilience to imbue this ale with a subtle bittering structure despite the absence of hops, the classic bittering agent for beer. Refreshingly acidic, dry, with enhanced delicate fruit characters only possible from employing unmalted grain this beer is flavoursome, complex, moreish, and delightfully low on alcohol rendering it unparalleled as an accompaniment to the table. Historically, this is what farmhouse ales were about; light, flavoursome, refreshing fermented beverages of low abv designed to slake the thirst of hard-working farmers by day. Less
