For the secondary fermentation use is made of a wine yeast that determines the unparalleled taste and that ensures the long-term taste evolution. The older the beer gets, the more complex the aromas and the fuller the taste and colour become. The beer is a dark, ruby red, with aromas of sweet, lightly roasted malt and coffee. The new recipe, based on four times more malt, gives the 9000 Quadruple a deep golden amber colour and a slightly fruity aroma. Together with a soft and slightly sweet taste, this provides a beautifully rounded bouquet with notes of dried fruit. Just like the other specialty beers from Brouwerij Van Steenberge, Gulden Draak 9000 Quadruple is a high fermentation beer with secondary fermentation. Brewmaster is an ode of the sixth generation master brewer to previous generations of brewers at Brouwerij Van Steenberge, to the craftsmanship of our traditional brewing art and in particular to the fifth generation of brewers: Josef Van Steenberge, who dedicated himself in 1975 to the specialty beers combined with the experiments of the new craft beer world. For the Gulden Draak Brewmaster, the brewers let the base brew of the Gulden Draak Classic mature in wooden barrels from distilled drinks, depending on availability. For the creation of the Gulden Draak Smoked, we go back to the ancient tradition of malt drying: smoking malt. This resulted in a smoked touch of the malt which you afterwards also could find in the beer. This typical smoky taste was lost over the years because the malt drying techniques were made considerably more efficient.
The use of smoked malt in combination with the specialty of Brouwerij Van Steenberge has a spectacular result: a heavy quality beer of high fermentation with a secondary fermentation in the bottle, baptized as Gulden Draak Smoked.
