employed the Bâtonnage method of lees stirring – the same technique used to bring texture to traditional Champagne. After almost 2 years in French oak barrels, we added fresh, whole pitted peaches for a complementary dimension of fruit.
The result is a highly approachable wine-hybrid with a restrained acidity, back-of-the-palate brioche character reminiscent of a good Champagne, and a delicate fruity peach character on the front palate.
