The Orval’s brewery produces only one beer to sell, a beer with a high fermentation that continues in the bottle. It is 6.2% ABV. This beer is brewed exclusively from spring water, barley malt, hop cones, candy sugar, and yeast. The aroma and the fine taste are due more to the hop cones and the yeast than to the malt that is used.
What’s special about Orval’s beer is that hops are added at two different stages of the production process. First, in the brewing room, a large quantity of very fine hops are added – this produces the famous bitter taste and is the reason why the beer keeps for a longer period of time. Later, in the storage cellars, hops are once again added. This is the so-called British “dry hopping,” which produces the delightful aroma that completely enraptures even the most carefully forewarned taster.
In the tasting room, Orval’s beer and cheese make a really good pair: the unique shape of the bottle and the glass, the design of the label, the coasters and other publicity materials – it’s all a legacy from the early 1930’s.

Het bier dat sinds 1931 gebrouwen werd om de heropbouw van de Abdij van Orval te financieren groeide uit tot een icoon.
Orval produceert slechts één bier om te verkopen, een bier met een hoge gisting met nagisting in de fles.
Bij een uniek bier hoort uiteraard een legende, en ook bij Orval kan deze dan ook niet ontbreken.
De legende start bij gravin Mathilde van Toscanië.
Mathilde, die weduwe was, had per ongeluk haar trouwring in de bron van het dal laten vallen; ze smeekte God om hulp en het duurde niet lang of er kwam een forel boven water met in zijn bek de kostbare ring.
Mathilde riep toen uit “Dit is echt een gouden dal!” (Orval, “val d’or” betekent “gouden dal”)
en ze besloot uit dankbaarheid op deze gezegende plaats een klooster te stichten. Orval was geboren…
Herkenbaar in het etiket is dan ook de forel met de ring in zijn bek.

Orval è uno dei più famosi birrifici trappisti belga situato all’interno del più antico monastero trappista di tutto il paese. L’Abbazia di Notre-Dame d’Orval venne edificata a partire dal 1070 mentre non è chiaro se la produzione della birra avvenne sin da subito.
Le fonti ufficiali fanno risalire l’attività brassicola a partire dal XVII secolo, ma alcuni documenti e dipinti fanno supporre che la birra venisse prodotta anche in tempi più lontani. L’attuale birrificio di Orval venne edificato nel 1931 dall’architetto Henry Vaes, che progettò anche la particolare forma della bottiglia che tutt’ora caratterizza l’Orval.
Sull’etichetta compare il disegno di una trota con un anello in bocca, che è alala base della leggenda circa la fondazione dello stesso monastero. La produzione di Orval è limitata a circa 70000 hl/anno di cui il 15% destinato all’esportazione della sola Orval Trappist Ale.

I modsætning til de andre belgiske trappister har Orval kun begrænset sig til at producere denne ene enkelt øl. Denne beslutning er indpakket i den unikke tilgang, der blev taget af Orval's Trappist-samfund lige fra begyndelsen. Orkens munke startede deres bryggerier, så de kunne finansiere rekonstruktionen af deres kloster.
Fortjeneste fra øl blev omfordelt, med over halvdelen gik til velgørende årsager, resten til klostrets bygning. Ølet viste sig sikkert værd - inden for femten år steg et komplet kloster fra asken.
Som alle går for at bekræfte, at Orval, øl, er intet mindre end et fænomen. Selv i dag, med eksplosionen af stilarter og kvalitet blandt belgiske øl, er Orval en sjælden perle - succesfuld forening af humle, gær, byg malt, krystalliseret sukker og et strejf af vilde gærmagi, for at producere den varme Orval glød.
Ardennes lokalbefolkningen har en tendens til at have en præference for deres Orval at være i alderen mindst seks måneder, 'vieil Orval' som de kalder det. I sådanne ældre bryggerier vil de vilde gærer have afsluttet deres opgaver, derfor grunden til denne præference: øl vil være mindre tør, mildere og mere kompleks. Men alderen Orval er også gode nyheder for diabetikere.
Det er fordi de vilde gær forbruger de resterende sukkerarter i flasken, da øl er forbi uden spor af de søde ting. Forlader masser af plads til Orvals komplekse smagsprofil for at afsløre sig fuldt ud til din gane.
