This beer was fermented and aged for three months on the pressed skins of Chardonnay and Pinot Blanc grape skins kindly provided by Renegade Urban Winery (based in Walthamstow, London). The natural yeasts present on the grape skins provided new dimensions to the fermentation profile typical of our house culture. The combination of these factors has produced a delightful textured mouthfeel, zippy acidity and notes of white wine, gooseberries and a touch of Brettanomyces funk.

A collaboration with our friends at Balance Brewing and Blending – we brewed a batch of strong golden wort directly into neutral wine barrels along with both our house cultures and allowed this to ferment and mature for 16 months . The t wo barrels were then transferred onto 100kg of whole Scottish gooseberries which had undergone carbonic maceration. This traditional winemaking process h elps break down the fruit and allows the creat ion of additional flavour compounds. The result is fresh and floral with intense gooseberry aromatics. Bottle conditioned, 386 bottles only.
