y estamos orgullosos de traeros RIBA. una verdadera Pilsner estilo aleman. Elaborar una buena Pils significa estar en cada detalle, por más pequeño que sea, y ser meticulosos en el proceso. En ese sentido comenzamos con agua 100% de osmosis inversa para lograr el perfil de agua ideal para elaborar este estilo. Agregar solo los minerales justos y necesarios nos permite lograr ese paladar suave y nítido que una birra de este estilo debe tener.
Luego usamos 100% malta Pilsner de Bamberg para darle suaves notas a pan. La selección de lúpulos es una trifecta de los lúpulos alemanes estelares. Dos de los cásicos Hallertau Mittelfruh y Tettnang que le brindan notas herbales, florales y con un toque suave a ralladura de limón que se complementan perfectamente con un lúpulo aleman más moderno : Saphir, un lúpulo deslumbrante que combina algunas de las clásicas y nobles características con notas punzantes a mandarina. A pesar de no tener dry-hop, petamos el whirlpool de estos lúpulos para mantener el caracter lupular en RIBA. En fermentación usamos nuestra levadura Bavarian de la casa. La fermentamos de la forma mas baja con una lenta y larga fermentación que logra una pils extremadamente clara y nítida una vez que el proceso de lagering se completa. Llegando al final de la fermentación la se “tapona” para conseguir una carbonatación elegante. El taponado es un proceso de sellado del tanque al final de la fermentación para atrapar el co2 producido por la fermentación restante resultando en una cerveza con una carbonatación natural con burbujas suaves y finas. Perseguimos atrapar en la forma mas suave (apenas perceptible) el caracter sulfúrico de la cerveza para conseguir un perfil auténtico que complementa el aroma lupulado. Luego de que el largo fermentado bajo cero secompleta, la levadura, proteinas y polifenoles caen. El resultado es una pilsner sin filtrar ni refinar que conseguira una turbidez suave en los primeros dias con interesantes notas a piel de limón y mandarina con un gran caracter herbal clásico. En el paladar, siendo fiel al estilo, un amargor firme pero fino hace enfasis en el combo de lúpulos dando paso a notas gentiles a pan, galletas y un toque de miel terminando con un final seco y lupulado para redondear la experiencia.

The beer is cast away to fermentation where it meets our house bavarian lager yeast. We ferment this as low as possible for a long slow fermentation that yields an extremely clean and crisp pils once the extended lagering process is complete. Towards the end of fermentation the beer gets spunded to achieve an elegant carbonation. Spunding is the process of closing off a fermentation tank towards the end of fermentation to trap in the CO2 produced by the remaining fermentation resulting in a beer that is naturally carbonated with fine, soft bubbles. We strive to lock in the slightest hint (barely perceptible) of sulphur character in the beer to really achieve an authentic profile that compliments the hop nose. After an extended sub zero lagering is complete which allows yeast, proteins and polyphenols to drop out the beer is packaged. The result is an unfiltered, unfined Pilsner that will pour slightly hazy when young with appealing notes of lemon and tangerine zest with plenty of classic herbal character. On the palate and true to style, a firm but fine bitterness is felt which emphasises the hop combo before gentle notes of cracker, bread and slight honey appear before a dry and hoppy finish round out the experience.
We have made a huge amount of changes in how we brew lagers down through the years and have played around with various experimental batches of Pils (more of them to come) and we are proud to bring you RIBA. A true northern German Style Pilsner. Brewing great Pils is about paying attention to all of the small details and being meticulous in process. To that extent we start with 100% reverse osmosis water to allow a water profile perfect for brewing this style. Tal vez la más floja de las Garage Beer. Todas ellas son cervezas ligeras, supongo para llegar a un consumidor no habituado a las cervezas artesanales. Con la baja iluminación del local, las tres cervezas que producen tienen el mismo aspecto.
