Viking’s Footstep is a Scotch Ale with a difference. It’s brewed using Myrcia Gale, a herb foraged in Perthshire near the brewery. It was used in the brew at the boil stage, just as you would with bittering hops. It’s a core part of the beer, completely replacing hops in the recipe.
Wasted Degrees say “Scotland, until the 1800’s, persisted with the use of native herbs rather than hops in its brewing. The past has a lot to teach us about local, low-environmental footprint ingredients. The malty-sweet profile of this beer is complimented by a hint of eucalyptus on the palate, a flavour derived from one such native herb, lost to brewing history: Myrcia Gale. The Vikings are known to have brewed with the same ingredient. A nod to history, ancestry and flavour exploration. The recipe’s grain bill is based on a Scotch Ale, otherwise known as an 80 Shilling.”
