Grisettes evolved as lower - alcohol members of the saison family: dry, hoppy, yeast forward and refreshing. This grisette was brewed this time last year, and then refermented for 6 weeks on fresh rhubarb stalks (at 150g / litre, grown in Suffolk), it being rhubarb season at that point (it is also rhubarb season now, and we have some coming in next week). We've usually added fruit to our Bieres de Saisons, with the beer often providing the bulk of the acidity, but here the softness of the base grisette has the rhubarb to bring the acidity to the party. Even still, it is not really a sour beer. Some wildness has developed over the last year, but only a touch. The rhubarb is subtle, but plays really really well with the spicy yeast characteristics from the grisette, both of which evolve and grow through the course of drinking this beer.
