The Ale Apothecary è sicuramente uno dei migliori produttori di birre selvagge di tutti gli Stati Uniti d’America.
Be Still è una Dark Sour Ale prodotta utilizzando un grist contenente una buona percentuale di malti tostati. La fermentazione avviene in botti ex Pinot Nero e Whisky per mezzo di colture di lattobacilli indigene, brettanomyces e pediococchi.
Nel momento dell’imbottigliamento i mosti fermentati nelle diverse botti vengono blendati e infusi con cascara (frutto esterno essiccato al sole del chicco di caffè) e granella di cacao.
Come afferma anche il birrificio Be Stil è uno sguardo verso un mondo brassicolo che sta aspettando solo di essere esplorato.
