Su Legno, Barrel Fermented Ales. Primo

‘Su Legno’ translates from Italian to ‘On Wood’, and that is very much the backbone of this Australian brewery. Combining the art and science of brewing with inspiration from 18th-century brewing methods these brewers aim to make old new again. All their beers are designed with drinkability as a core goal and with barrels as a key ingredient, beyond those two factors innovation and experimentation are permitted to run wild.

The Primo was the first beer from Su Legno, an amber-style ale fermented in charred American oak barrels. It went through many iterations before becoming the foundation that which all future beers would move forward from. The 6% ABV was established as the perfect point to provide body to support the oak without alcohol warming.  Ale, crystal and roast malts were combined in different percentages over many recipes until landing on a combination that works with the charred American Oak without being too rich or intensely malty.
