A velvet smooth concoction of dried fruit and caramel pairs with subtle resin citrus infused from fresh spruce tips, along with just enough rounded hop bitterness to ensure a clean, crisp finish.

Smooth dark beer brewed to a traditional recipe, although the infusion of spruce tips, harvested at Whitelee Windfarm outside Glasgow, provides some light character. Rebrewed for 2022.
Phil from Simple Things says “It’s a style that’s criminally misrepresented a lot of the time. Boring, sweet, almost cloying. It doesn’t have to be this way! The key to getting it right is a clean, almost Germanic, fermentation. We ferment low and slow and let the malts shine. Last year’s version was not too far removed from a Dunkel but this year the spruce tips are a bigger part of the picture. It’s modern, proudly Scottish and there’s probably not another beer available in the UK today that tastes anything like it.”
