Intentionally brewed to replicate the bolder, brasher bigger beers in our lineup, we really dig how we're able to bring that full mouthfeel and hop intensity of a DIPA, but at a more sensible Pale Ale kinda strength. Time Gone By is our latest effort in the long lore of the Polly's DDH Pale story; featuring an all killer, no filler dry hop lineup of 30kg of Citra, 10kg of Simcoe, 5kg of Galaxy, and a final flourish of 2kg of Idaho 7, this beer positively bursts with the typical Polly's flavour checklist. Expect to find juicy tropical fruits, lime and grapefruit up front, before a second wave of peach, apricot, and gooseberries, with just a whisper of pine needles for balance.
