It all started as most collaborations seem to start – a busy and bustling festival atmosphere, sharing beers from some of the best breweries in the world, when a suggestion is thrown into the elated, boozy ether – shall we brew a beer together? After meeting for the first time at one of our first international festivals Billies Craft Beer Festival back in late 2022, we had no idea that OG craft titan Kees Bubberman – former brewmaster at Brouwerij Emelisse before launching his own brewery in 2015 – was actually serious about working with us. An opportunity arose earlier in the year that allowed for a visit over to the UK and planning immediately began – our real strength lies in big, strong silly beers, so why not brew a big, strong silly beer together? Old and New brings a metric tonne of Citra, Galaxy and Nelson together for an almighty TIPA that is equal parts dank, juicy, and tropical. Insane.

Nada was a phenomenon with drinkers when we first brewed it in 2019; its high juice, low bitterness flavour profile directly inspired by the American haze craze brewers without whom we wouldn't exist today. Revisited again in 2020 because we loved brewing it so much, we're back again with a 2024 version after a fallow 2023 without one of our favourite beers, with an even bigger dry-hop bill than its previous versions at 25g/l, this in-house favourite is tasting better than ever. Bringing the big hitters to the table with a metric tonne of Citra, Columbus and Simcoe in the dry hop, this beer is all about the sticky, juicy hops. Expect a swag bag full of dank and tropical hop notes - think tangerine, ripe passionfruit, and mango complimented by a mellow piney bitterness running throughout. A Polly's classic, back and in fine form. Our flagship core beer - the style we're most well known for, and what we do best. Rosebud is an IPA brewed in the New-England style; the most popular variant of the style in the world. We've hopped this beer with the freshest Citra, Galaxy, Mosaic, and Simcoe hops to create a certified tropical punchbowl of flavour. Strong enough to retain all that incredible flavour and mouthfeel, but sessionable enough to still smash pints of.
