A savanyú sörök úgy készülnek, hogy vadélesztő törzseket vagy baktériumokat engednek a főzetbe, majd felforralják a sörlevet, hogy elpusztuljanak ezek a baktériumok és később ne befolyásolhassák az erjedést.
